Adobo Carbonara

Just want to share my adobo carbonara recipe. It's not easy to think of easy to prepare meals for my 3 boys who takes a VERY long time to eat! This saved my sanity for the days meal!

I saw an adobo flakes spaghetti online. Just tweaked this to my taste.

You will need:
Pasta
500 grams spaghetti noodles - cooked
*my spaghetti cooked to my liking in about 8 minutes. save some of the pasta water, a cup will do. I put in a teeny amount of oil in the boiling water.



Sauce
250 grams of chicken, cook it adobo style. save the oil. we will use this as base for the carbonara. Flake the adobo.
* 2 of my kids have G6PD so I cook adobo without the soy sauce. I use 1 tsp of salt instead.
1 tbsp canola oil
2- 3 small pieces garlic, minced (my kids will pick at their food at the first sight of garlic bits)
2 egg whites
3 tbsps grated Eden cheese
250ml Nestle cream
pinch of black pepper

1. Put in 3 tbsp of adobo oil and 1 tbsp of canola oil. Place adobo flakes(reserve a small amount for presentation purposes)
2. Add garlic after a minute.
3. Constantly blend everything on the wok. Place spaghetti noodles in. Add the pasta water.
4. Work in egg whites with grated cheese. Blend. Blend Blend.
5. Add cream. And pepper to taste.
6. Place in serving plate. Add the remaining adobo flakes on top.

Quite happy that the kids love it. Easy to prepare and very easy on the budget.
The pasta is just 30php, chicken is 35php, eggs are 10php, garlic - oil - pepper - cheese 20php, cream is 35php. 3 kids, 2 adults ate.
